This natural Catuai is a very solid example of Panama beans. It's a testament of the greatness of Panama region, both in terroir and quality of processing methods.
It tastes very clean and juicy, with tangerine, hibiscus, orange flower notes, while also being delicate and sweet.
It boasts an exciting 91 cupping score.
About the farm:
This Catuai anaerobic slow dry comes from Altieri Specialty Coffee, a family-owned operation based in Boquete, Panama.
The Rola plot, where the coffee was cultivated, lies at 1750 masl and stands out within the Mima Estate for its full-day sun exposure — ideal for consistent, slow cherry maturation.
At the Alto Lino processing facility, cherries were first sorted by density using a mechanical siphon. They then underwent a 72-hour anaerobic fermentation in sealed tanks, followed by slow drying on raised beds inside a greenhouse for 28 days.
