High Note Roasters: Our Story Begins Here

Hello, fellow coffee enthusiasts.
We're High Note Roasters, a small, hands-on coffee roasting operation right here in N1, London. We're all about those special, often rare, floral coffees – the kind that make you pause and think. We carefully select each one, roast them in small batches, and then get them straight to your door. And it's just the two of us doing this: George, whose coffee obsession started all this and somehow got me, Arina (the one writing this), completely on board!

Maybe you've had a coffee that just made you go, 'Wow, there's that in coffee?' For us, one of those moments was discovering a Pink Bourbon from Source. The incredible floral notes and unexpected sweetness were a real eye-opener. For George, that kind of curiosity became a dedicated pursuit, one that eventually drew me, Arina, into its orbit. Now, here we are, embarking on our own journey as roasters.

Our shared experiences exploring specialty coffee shops across Europe and beyond have been a constant source of fascination for us over the past five years. For George, this interest deepened from simply enjoying a good brew to actively seeking out ways to understand its subtleties – poring over SCA resources and coffee blogs, and engaging in countless conversations with baristas. Sharing the exceptional coffees we discovered with friends became a natural extension of this passion, eventually leading to the desire to explore roasting and share these unique flavors more directly. It felt like the most natural next step – from being avid consumers and enthusiastic sharers to actually crafting the coffee ourselves. We wanted to take those exceptional beans we were so passionate about and unlock their full potential, bringing those nuanced flavors directly to other coffee lovers.

Discovering the clarity and subtlety of light roasts, particularly through the experience of April in Copenhagen, marked a turning point in our understanding of coffee. Going to different coffee tastings and hosting our own get-togethers really opened our eyes to how many different kinds of coffee are out there, way beyond the usual stuff from Latin America. It made us realize the incredible range of terroirs and varietals that can create truly unique and exciting flavors.

At High Note Roasters, our focus is driven by a few core principles:

  • Tasting Everything: Every batch we roast is carefully tested and cupped to ensure it meets our standards and truly represents its potential. 
  • Subtle Floral Notes & Tea-like Bodies: We're particularly drawn to coffees that express delicate floral notes and nuanced aromatic profiles. We're all about that calm, balanced taste – you'll likely never find overly chocolaty, roasty, or wildly funky coffees from us.
  • New Discoveries: The world of coffee is vast and always surprising. Continuous Exploration: We are constantly seeking out new coffees and expanding our knowledge of origins and processing methods.

Plus, we're keen to share what we learn along the way, offering some hopefully interesting content for anyone curious to dive a little deeper into the world of specialty coffee.

Currently, our home in Kings Cross serves as our initial hub, where we meticulously roast and cup each coffee we source. We are excited about the coffees we have in hand and the experiments we are conducting. We invite you to follow along as we begin this journey and share our discoveries with you.
